One of the biggest challenges of being Gluten Free and Vegan is feeling like you have to do just about everything from scratch. Sometimes you just want to be a little bit lazy. Enter....Namaste's Gluten Free Spice Cake Mix. All the dry ingredients are spiced and ready to go. (Though I ended up adding quite a bit to it to turn it into an Apple Pecan Spice cake)
In lieu of the suggested Eggs, I used flax seeds mixed with warm mugwort/anise tea (for the Halloween season) and used Coconut Oil for the oil.
Separately, I caramelized sliced apples and pecans in maple syrup, salt, and coconut sugar.
Next, I oiled a bundt cake tray and added the cake batter and the apple pecan mix. It baked for 40 minutes at 350 and came out absolutely perfect in texture!
The namaste mix made it so easy, and I could 100 % taste their spice blend in the cake!
