Ingredients:
Grape Leaves
1 cup of rice per 10 leaves
2 Tbsp coconut oil
1 Tbsp salt
1/4 bunch parsley chopped
1 handful dried cranberries (I used Mariani Packing Company)
1 handful dried cherries (I used Mariani Packing company)
1 Tbsp mustard seeds
2 tsp cinnamon
Olive Oil (I used the Olive Tree USA Organic Olive Oil)
optional: Hummus (featured in photo Roots Thai Coconut Curry)
Cook rice 1 cup of rice per 10 grape leaves in 2 cups of water, Coconut oil, Salt, and Mustard Seeds.
Bring a pot of water to Boil and soak each Fresh Grape Leave in the water for 2-3 minutes until the color changes and it becomes more pliable. Lay the leaves out flat with their insides facing up to stuff.
Chop up the parsley and mix parsley, cherries, cranberries, and cinnamon in with the rice.
Spoon rice into the middle of each leaf. Remember, the leaf has to close so don't go crazy. Brush the edges of each leaf with olive oil to help it stick together and roll closed. I drizzle olive oil across the top once they are all done.
You can leave them plain or top with hummus!
