I've also been having giant tofu cravings. So i put it together with my Nettle Pesto obsession!

For the tofu:
1 pound tofu
1/8 cup coconut oil
1/2 tsp salt
1/2 tsp black pepper
finely chopped hot pepper
1/4 cup nettle pesto
Cut a block of tofu in half width wise so you have 2 half pound squares and then slice that into whatever size you want.
Put them aside on a papertowel lined plate with paper towels above and below the tofu and something with weight on top to press out some of the water.
While the tofu is pressing, heat the coconut oil, salt, and pepper on the stove. Toss in the hot pepper and let it cook for about 2 minutes stirring it around to transfer its heat to the oil. Add the tofu slices letting each side fry to a crisy brown color before flipping.
Next add the nettle pesto in smearing it over the tofu on both sides. add a little extra oil if needed. allow it to cook itself to the tofu, then flip to the other side. make sure to scrape the skillet as you go for stray pesto so it doesn't cook onto the pan.
