I served these at a party last week and they got so many compliments! Everyone wanted to know what made them so delicious :)
Ingredients:
For cookie dough:
Dry Ingredients:
1.5 cup Organic Gemini Tiger Nut Flower
1 Tsp salt
1 Tbsp xantham gum (if you can't use this, subtitute out for arrowroot)
1 Tbsp corn free baking powder
2 Tbsp cinnamon
1 Tbsp ginger
1/2 tsp clove
1 tsp Nutmeg
1 tsp Allspice
(Additional 4 Tbsp of cinnamon set aside in a bowl with 1/2 cup sugar of your choice. )
Wet ingredients:
3/4 cup sugar
1/2 cup coconut oil
4 Tbsp Sunbutter Organic
2 Tbsp Damiana Rose Vanilla Extract
Stir the wet ingredients together until the sugar, oil, and vanilla are dissolved into the Sunbutter.
Stir dry ingredients into wet ingredients. Take very small balls of dough and roll them into the sugar and cinnamon mix that was set aside coating the outside of the cookie. Press a thumbprint indentation into the center of the cookie.
Bake cookies for 6 minutes.
Fill the center with Barney Butter Cocoa Almond butter and a dried cherry from Mariani Packing Co.
Continue to bake for 12 minutes.
