Hidden Springs is another gem of a small company bringing you their organic Maple line.
If you've never had maple cream, get ready for one of the more amazing food moments in your life. The maple flavor is so mouth watering. When combined with the thick, creamy texture it makes a dessert all on its on. I did manage to have the self control to enjoy some on rice toast (the warm temperature of the toast melts the maple cream just enough to spread easily over the bread. Try adding a pinch of cinnamon and nutmeg for a heavenly tasting fall breakfast). I also dolloped some maple cream over fresh fruit to make a simple, yet gourmet feeling, afternoon snack. I think the most fantastic thing about Hidden Springs Maple Cream is that because the texture is so creamy it FEELS like your indulging in a super naughty food, but there's not a single ingredient other than Organic Maple!
Hidden Springs also offers a Maple Sugar option. The first thing i noticed when i tasted the sugar was the inviting texture of the granules. They quickly dissolve on your tongue leaving your mouth full of a rich maple flavor. The sugar is delicious sprinkled over fruits and on top of baked goods as an extra flourish, but it's also fantastic added into your baking recipes. Try adding about 3 TBSP of maple sugar to the wet ingredients of your cookies to add an extra dimension of flavor to your baking. (Maple compliments lavender cookies/cakes extremely well!)
And, of course, they feature Organic Maple Syrup. I tried their Amber and Dark Robust. Both are delicious. The Amber has a bit more of a lightness to it's flavor. The Robust's flavor is a bit deeper. Both are great for pancakes depending on your pallet. I like the Amber for things like dipping fruits, drizzling over muffins and pancakes (ok, so i drown my pancakes), salad dressings, or adding into your baked goods. Robust was my favorite of the two for use in smoothies, it was great over pancakes, and I mixed it with vinegar to make a glaze for my brussel sprouts that was absolutely incredible. Robust will definitely be what my veggies are cooking in for Thanksgiving this year!
