Did you make too much Pesto Tofu? I chopped mine up into a delicious salad!
ingredients:
Pesto Tofu from the previous post chopped up into small cubes.
1/2 bunch lovage leaves
5-8 strawberries slices thin
1/2 large cucumber
5-6 radishes (i used a combo of red and white radishes)
2 sliced palm hearts
1 tbsp capers
small handful of cashews
1/4 small red onion, diced
1 scallion
Chop everything and toss together.
For dressing:
1/4 cup raw cashews (soaked for at least 2 hours or boiled for 5 minutes)
1/4 cup almond milk
1 tsp apple cider vinegar
1 tbsp capers
1 tsp salt
1 tsp pepper
1 Tbsp dill
Place all ingredients in blender until smooth. If you need more liquid you can use either the brine from the capers or a splash more almond milk.
